Mobile Bay Crab Meat Benedict
Butter 1/4 cup (2 sticks)
White crab meat 1 cup (2 pounds)
Hard-cooked
grated egg 1
tablespoon Sherry 2.8 (or 1/2 cup)
tablespoon Lemon juice 1/2 to 2
Tabasco - dashes of 1 to 5
English muffins halved and toasted 4 to 16
Hollandaise Sauce -packages 1 to 4
Melt butter in a skillet. Add the crab meat, grated eggs, sherry, lemon
juice, Tabasco. Cook until heated through.
Place English muffin half in each serving dish. Cover with crab meat
mixture. Top with Hollandaise Sauce. Place under broiler until bubbly.
Garnish: Paprika, chopped parsley, stripped green onion.
