Pumpkin Honey Muffins

Pumpkin Honey Muffins

2 c. cooked, mashed pumpkin
2 eggs
1/2 c. oil
1 c. honey
3 c. flour
1/2 teaspoon baking soda
1 Tablespoon baking powder
1/2 teaspoon salt
1 1/2 teaspoon pumpkin pie spice
1/2 cups raisins and 1/2 cups nuts optional

Mix first four ingredients in blender. Pour into bowl. Sift together dry ingredients; add to liquid and mix. Add raisins or nuts, if desired. Spoon into paper muffin cups, or well greased cupcake pans. Bake at 375 degrees for 20 minutes.
