Dear Abby's Gourmet Rice Pudding

2/3 cup uncooked enriched long grain white rice (not instant or converted)
3 cups boiling water
1/2 ts salt
14-oz. can sweetened condensed milk (I prefer Eagle brand)
1/2 cup raisins, if desired
1/4 cup butter (or margarine)
1 tbsp vanilla

In top of double boiler, combine rice, boiling water and salt. Cook, covered, over medium heat about 40 mintues or until rice is tender. Water in the bottom of the double boiler should be boiling...and more boiling water may have to be added before rice is done. Do NOT drain. Stir in sweetened condensed milk & butter. Cook, uncovered, stirring frequently, until slightly thickened, about 20 minutes. Remove from heat; add raisins and vanilla.

Serve warm or cold - if you taste it warm, there may not be enough left to eat cold. If you like rice pudding, this will be your favorite recipe. It's mine. Serves: 6 to 8.

TIP: Rice should be cooked covered until tender
