Dear Abby's Summer Cucumber Salad
Salt
4 cucumbers, peeled, scored and thinly sliced
3 medium tomatoes, diced
1 large red onion, diced
1/2 cup salad oil (do not use olive oil)
1/2 cup vinegar
3 to 4 teaspoons sugar
1 tablespoon or more dried dill weed
Pepper; to taste
Salt cucumber slices thoroughly; let stand 15 to 20 minutes to release moisture. Pour off liquid.
Add remaining ingredients; toss well. Cover and chill several hours to blend flavors. Serves: 8
TIP: Use slotted spoon to drain away most of the marinade. The vegetables will be well seasoned.
