TRAILBLAZING PEANUTS
Ingredients:
1 T. chili powder
1/2 tsp. paprika
1/2 tsp. cayenne pepper
3 1/2 C. cocktail peanuts (about 1 lb.)
Combine dry ingredients; mix well and set aside. Place peanuts
in a microwavable dish. Microwave on High (100 percent) for
6 minutes, stirring peanuts every 2 minutes.
Sprinkle spice mixture over peanuts and stir until well coated.
Store in a tightly covered container. Makes 31/2 cups or
14 servings.
NOTE: For added flavor, drizzle 1 tablespoon of peanut oil over
peanuts; stir to coat. Microwave on HIGH (100%) for 6 minutes,
stirring every 2 minutes. Drain on paper towels; then sprinkle with
spice mixture and stir until well coated. Store in a tightly covered
container.
Nutritional analysis per serving: 211 calories, 7 grams
carbohydrates, 10 grams protein, 18 grams fat (71 percent
calories from fat), 0 milligrams cholesterol, 3 grams fiber and
161 milligrams sodium
