DEPRESSION ERA POTATO ONION SOUP WITH DUMPLINGS
Eash time you boil potatoes, save the potato water. (Nutritionists say that much of the food value is in the potato water). Cook chopped onions in the potatoe water; add a few potatoes and mash smooth. This soup base will keep in the refrigerator up to five days. When ready to used add some milk and seasonings, bring to boil and drop dumpling batter in it. No thickening is needed. It was a delicious tummy filling food.
DEPRESSION ERA FARINA DUMPLINGS
Bring to a boil:
1 c. milk
1 t. sugar
1/4 t. salt
1 t. butter
Add:
1/4 c. farina
Stirring constantly, cook till farina doesn't adhere to sides of pan. Add 1 egg and beat well; drop from t. into boiling clear soup. Chopped parsely may be added for color and flavor. Cook 15 minutes covered.
