Default New Years Day Tradition recipes

Does anyone have favorite recipes for "greens for money" and "black eyed peas for good fortune"?

Default Greens for money, Black eyed peas for good fortune recipes

"Greens for money"

Southern Style Collard Greens

3 pounds of collard greens
1 smoked ham hock
1 onion chopped
2 teaspoons minced garlic
3 teaspoons cider vinegar
3 teaspoons corn syrup
1 teaspoon salt
1/2 teaspon black pepper
1'2 treaspoon red pepper
1/2 teaspoon white pepper
a few dashes of hot pepper sauce

Cut off & discard base of stems. Coursely chop
upper stems and leaves. Wash and drain thoroughly.
Put 1 cup of packed greens in blender or food processor,
puree and set aside. Place remaining greens along with
the ham hock in a large pot, cover with water. Bring
greens to a boil, add onions, garlic, corn syrup and
seasonings, reduce heat to a simmer. Add pureed collards,
cover and cook for 2 hours or until greens are tender.

Black Eyed Peas for Good Fortune

New Years Day Dip

1 lg. onion, minced
2 stalks celery, finely chopped
4 jalapeno peppers, seeded and finely
chopped
1/2 c. catsup
1/4 c. finely chopped green pepper
1 tsp. salt
1 tsp. coarsely ground pepper
1 tsp. hot sauce
3 tsp. chicken-flavored bouillon
granules
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 (16 oz.) cans black-eyed peas,
rinsed and drained
1 (14 oz.) can whole tomatoes,
drained and chopped
1 tsp. garlic powder
1/2 c. bacon drippings, melted
3 tbsp. all-purpose flour

Combine first 11 ingredients in a saucepan. Cook over low heat until mixture begins to simmer. Stir in black-eyed peas, tomatoes, and garlic powder. Simmer 30 minutes, stirring frequently. Combine bacon drippings and flour. Add to mixture in saucepan. Simmer 10 minutes. Serve dip with tortilla chips. Yield: 4 cups.
