SPECIAL K ROAST (Cottage Cheese Roast)


Ingredients:

1 large onion
1/2 cup (1 stick) butter
1 package dry onion soup mix
16 ounces cottage cheese
1 tablespoon soy sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic granules
5 large eggs
4 cups Special K cereal

Preheat oven to 350 degrees F. Spray a 13 x 9-inch glass baking pan
with Pam.

Mix all ingredients well in large mixing bowl. Spread mixture in
prepared pan. Cover with foil. Bake for 45 minutes. Remove foil and
bake an additional 15 minutes.

Serves 12.

Serve with mashed potatoes and gravy
