Default Smashed Sweet Potatoes with fried apples

Smashed Sweet Potatoes with fried apples

Recipe can be cut in half


Ingredients:

8 pounds (about 12 large) sweet potatoes
Scrub potatoes, prick several times with a knife or fork. Bake 1 hour at
375 degrees or until soft when pierced with knife. (Microwave baked is
fine) Spray baking dish with Pam

Mix the following

1 cup orange juice
1 cup heavy cream
8 tablespoons (1 stick) butter, melted
1/2 cup brown sugar
2 teaspoons nutmeg
1 teaspoon cinnamon
4 teaspoons salt
1 teaspoons ground pepper

When cool enough to handle, remove skins or remove insides with a spoon.

Place 1/2 of the potatoes in a large mixer bowl. Add one half of the juice/cream mixture. Blend until mixed but not smooth pour into a large baking dish. Repeat with remaining potatoes and juice/cream, add to baking dish.

6 tablespoons (3/4 stick) butter
6 McIntosh, Granny Smith or Fuji apples, or combination apples, peeled,
cored and sliced (I make
them into rings)
6 tablespoons brown sugar

Melt butter in large skillet over medium heat. Add apples. Cook about 10
minutes, turning apples occasionally, until lightly browned on both sides.
Sprinkle brown sugar over apples about 1/2 way through cooking time.

Place fried apples on top of smashed potatoes. Bakes 30 minutes until heated through.

Note: If refrigerated before baking, add additional time for
reheating.

Serves 15-20

The fried apples are a great side dish with pork by themselves.
