Chicago Public School Cafeteria Butter Cookies

I made these to take to the horse show to snack on tonight and they were a big hit. Not too sweet loved the buttery flavor. My daughter wanted the recipe, she is going to make them and put rounds of strawberry ice cream between them and make homemade ice cream sandwiches for her son's class. That is why I like this recipe - not too sweet! I have also made them into "fingers" and dipped them half-way into melted chocolate and sprinkled with jimmies, hundred-thousands, etc. Different color melted chocolate and decorations for the holidays and the kids just love it! And I have tinted part of the dough when needed - just for certain occasions!
