Apples a la Mode
INGREDIENTS:
1 large apple such as Gala* halved, cored and cut into ½ inch wedges
1/4 teaspoon orange peel, grated
1/4 teaspoon cinnamon, grind
1/2 teaspoon vanilla
2 cups low-fat, no-sugar-added ice cream
12 reduced-fat vanilla wafers, coarsely crumbled
Gala apples are known for their crisp and sweet flavor that's why they complement well in this recipe. However, cooking apples like Golden Delicious could also work.
COOKING INSTRUCTIONS:
1. Using a medium skillet. Mix together apple, orange peel and cinnamon. Adjust heat to medium-high and bring mixture to a boil.
2. After attaining boiling point, adjust heat to medium-low. Simmer the mixture for 3 minutes or until the apples are crisp and tender. Use rubber spatula when stirring apples constantly.
3. Remove from heat when cooked. Mix in vanilla. Let the mixture cool for 5 minutes.
4. In serving, get a serving cup or goblet, shower apple mixture with cookie crumbs and serve over ice cream.
