Thanks Kitchen Witch,

Your second recipe for eggplant casserole is what I'm looking for, I will make it tonight. Also the sweet Potato pie is the one I'm looking for I made it this week-end. It is so close to the one I lost that I will continue to use it my Hubby loves it.

I am very happy that the recipe was close to what you were looking for - for the eggplant casserole and the sweet potato pie was right on!
I would go nuts if I lost my recipes! If you need any more - just give a holler!
