Taco Skillet

This is a standy by at my place! Serve it with your favorite spanish rice or try my easy recipe!

1 lb ground beef
1 pkg taco seasoning
1/3 cup h2o
1 tomato, diced
1 cup shredded lettuce
2/3 cup crushed tortilla chips
1/4 cup shredded cheddar
sour cream
salsa

Brown ground beef, add taco seasoning mix and 1/3 cup h2o. Simmer for abbout 5 monutes or until water is absorbed. Top with remaing ingredients.

Spanish rice

1 1/2 cup instant rice
1 1/2 cup h2o
juice of one lime
1 cup hot salsa or picante sauce
2 T butter

Cook rice and h2o in a 2 quart casserole coverd dish in the microwave on high, 5-6 minutes stir in remaining ingredients. Serve. Both recipes make enough for 4 servings.
