another quickie - pressed for time today
It's cold outside and I want to serve a nice hot meal but I am pressed for time today!
One of my favorite quickie dishes is Penne with Sun-Dried Tomatoes and Artichokes -
Today I will cook penne pasta al dente.
Drain well; return to pan with a drizzle of olive oil.
To this I add about 3 T. oil from a jar of diced sun-dried tomatoes packed in oil and diced sun-dried tomatoes**; also a small jar of marinated artichokes, well drained. Heat through, stirrrng so it doesn't stick.
Place in a large pasta bowl for serving; along side a bowl of fresh grated Pecorino-Romano cheese (grated while the water was boiling). Also I slice fresh Italian bread on the diagonal and place on a baking sheet in the oven (not the broiler) for a nice warm bread.
Green salad of romaine and iceberg lettuce, carrots, cukes, tomatoes, radishes with a drizzle of olive oil and fresh squeezed lemon juice - salt, pepper, basil.
By keeping homemade salad mix in the fridge - it doesn't take long to add the rest of the ingredients.

I have a great meal made in less than 30 minutes and everyone is happy!!
