Chicken Roasted with Mushrooms
1 whole chicken cut up 3 T. olive oil 1 t. thyme 2 t. cajun seasoning or seasoning salt 1 lb. whole mushrooms
Place a large roasting pan in preheated 500 degree oven until heated. Place chicken in large bowl and coat well with 1/2 of oliveoil and seasonings. Place in a single layer in preheated pan. Bake turning once for 30 minutes. Place mushrooms in bowl with remaining oil ans seasonings toss to coat. place around chicken and bake stirring once 15 minutes or until mushrooms and chicken are tender.
For those of you who don't like mushrooms I have also done this using potatoes cut in big chunks instead of the mushrooms. Just put them in when you start the chicken.
Served with corn on the cob and cauliflower and cheese sauce.
