cooking for 2 days - and trying not to make it look like leftovers!

sometimes leftovers aren't appealing enough - other times they are great!
today was fish & chips, and enough macaroni salad and cole slaw so that tomorrow I could make chicken in a basket!
because i used the deep fryer yesterday - I don't want to deep fry again - so its honey chicken in the oven - skinless boneless chicken breast and thighs -
mix 1/2 c. honey with 3 - 4 T. balsamic vinegar - coat chicken pieces well - then transfer to dish of crushed buttery crackers adding salt, parsley and pepper to crumb mixture - and coat very well - placed on foil lined (spray foil with nonstick spray) baking sheet in single layer and bake at 350* F. until done
on a separate baking tray - sprayed with nonstick spray - my potato "buttons" - wash potatoes and scrub skins well - slice 1/4-inch thick - place in single layer on prepared sheet and bake until done - turning halfway through - don't forget to season with salt, pepper, parsley before baking!!
served with left over macaroni salad and coleslaw - no complaints about leftovers with this one!
and I don't have to worry about added fat from deep frying!
