Default another SMR/Daily Recipes dinner

Friday is fish day at my house and this is one of the recipes from Daily Recipes from our sister site - another keeper that we really enjoyed!


Baked Fish


1 lb fish fillets (I had haddock)
1/2 tsp salt
1/8 tsp turmeric
1/2 tsp cumin powder
1/2 tsp ground black pepper
1 Clove garlic -- chopped
1 tsp oil - I used olive oil
1 1/2 tsp fresh lemon juice



Place fish fillets in a bowl, sprinkle with salt, turmeric, cumin, black pepper and garlic, tossing to coat well. Cover and marinate for 20 minutes at room temperature or longer in the refrigerator. Preheat oven to 400F degrees. Coat the bottom of baking dish with the oil. Place the fish in a single layer and pour the marinade over it. Bake uncovered for 20-25 minutes. The fish should be firm to the touch. Fish is done when it easily flakes with a fork. Sprinkle with lemon juice.


and I did a mix-n-match with another recipe from Daily Recipes -

Lemon Couscous

1 3/4 cups chicken broth
2 tsp grated lemon zest
2 Tbs fresh lemon juice
1 Tbs unsalted butter
1/4 tsp salt
1 10-ounce box couscous
1 Tbs chopped parsley


In a medium saucepan, combine the broth, lemon zest, lemon juice, butter and salt; bring to a boil. Stir in the couscous and parsley; cover and remove from the heat. Let stand until the liquid is absorbed, about 5 minutes. Fluff the couscous with a fork.
