Default another recipe from SMR -our sister site

this is the recipe from our sister site - SMR/Daily Recipes - Quick and Easy - and following is what I did with it:



Portuguese Chicken


4 all-purpose potatoes, such as russets, peeled, and cut into quarters
4 carrots, peeled, and cut into large pieces on a diagonal
3 celery ribs, cut large pieces on an angle
1 large onion, cut large chunks
1 cup dry white wine
2 tsp sugar
1 tsp salt
1 Tbs extra-virgin olive oil
2 cups chicken broth
3/4 lb chorizo, cut 1 1/2" slices on an angle
4 pieces poached cooked chicken, leftover, sliced on an angle into 1" strips
1 cup tomato sauce
1/4 cup chopped flat-leaf parsley
Crusty Portuguese bread or other chewy farm bread, for passing at table



1 Place potatoes, carrots, celery and onion in a pot. Pour in wine, add sugar, salt, and oil. Add 2 cups of chicken broth. Cover pot and bring to a boil. Reduce heat and simmer 15 minutes.
2 While vegetables cook, brown chorizo in a small nonstick skillet over medium-high heat.
3 If your leftover chicken was frozen, defrost in microwave. If the leftovers were refrigerated, continue with recipe method as below.
4 Remove the cover from the vegetables and add chorizo to the vegetables. Stir in tomato sauce. Set cooked chicken into the pot and heat through, 5 minutes. Adjust seasoning.
5 Ladle Portuguese Chicken into shallow bowls and garnish with parsley. Serve with crusty bread for dipping.


Servings: 4

I popped everything in the crockpot!! I had no chorizo so I used spicy homemade Italian sausage and replaced the white wine with another cup of broth; used chicken thighs (skinless - which I left whole) and of course - substituted the crusty Portuguese bread with crusty Italian bread. oh - and I didn't need the oil!

Served with a nice crisp green salad, olive oil, lemon juice, salt, pepper and basil.

Dessert - a recipe I have had for some time - homemade chocolate frosted butter cake with ice cream.



BUTTER CAKE


1 cup butter or margarine
4 eggs
1 tsp. salt
1/2 tsp. baking soda
2 tsp. vanilla
2 cups sugar
3 cups flour
1 tsp. baking powder
1 cup buttermilk


Cream together butter and sugar. Blend in eggs, one at a time. Combine flour, salt, soda, and powder. Combine buttermilk with vanilla. Add milk and flour mixtures alternately to butter mixture until well combined. Turn into a greased 10 inch tube pan. Bake at 325 for 60 to 65 minutes.

Chocolate frosting: confectioners' sugar, cocoa, vanilla and milk.
