easy meatless Friday

It's one of those days - too many places to be and no time to cook - but I gotta feed the hungry! Salads are all ready done and in the fridge for later.


Macaroni salad, penne pasta, hard-cooked eggs, chopped sweet pickles, chopped shrimp, chopped celery, chopped onion, carrot chips, mayo.

Tuna salad sandwiches - tuna, mayo, chopped onion, chopped celery, chopped sweet pickle; served on toasted rye with lettuce, tomato slices, onion slices and white American cheese.

I'll make a relish tray with sweet and dill pickles, stuffed olives, pepperoncini, banana peppers, pickled beets, etc.

Iced tea.

Easiest dessert: graham cracker crust lined with sliced bananas filling bottom and coming up sides of crust; instant banana pudding. Whipped cream and chopped nuts for serving.
