Default meatloaf for a Sunday meal

I think tomorrow will be a crockpot meat loaf. Form half the meat mixture into the bottom of the 6-qt. crockpot (leaving room to place taters around it), sprinkle with about 3/4 c. shredded Monterey Jack and pepper Jack cheese blend (this way it won't be too strong) to within an inch of the edges; top with remaining meat mixture and "seal" along edges. Chunked potatoes aroung the meatloaf. Sprinkle about 1/4 - 1/2 c. shredded Monterey Jack and pepper Jack cheese blend over top of meatloaf during last 5 minutes of cooking - just to melt.

Corn on the cob.

Iced tea.

Too humid to bake a chocolate cake so I will make chocolate cakes in my Xpress 101; drizzled lightly with chocolate glaze.

Hi rhodry69! Half the meat mixture is half the meatloaf mixture - basically ground chuck, eggs, dry bread crumbs, salt, pepper, parsley, garlic, ketchup...whatever your favorite meatloaf recipe is - or you can always add taco seasoning to the mixture with Monterey Jack and pepper Jack cheeses. Just about everyone has their quick and easy meatloaf recipe - it not - we have tons of them here at RSN if you would like to try something new! I originally didn't post the meatloaf recipe - I don't measure - it's by feel, look and touch!
