a chocolate lovers' breakfast/brunch
Chocolate lovers! Here's one for you and what I have done with it:
CHOCOLATE PANCAKES
3/4 cup butter
3/4 cup cocoa
2 cups flour
1 1/2 cups sugar
4 eggs
2 teaspoons vanilla
1/2 teaspoon salt
1/2 cup Buttercream Frosting
Melt butter with cocoa. In small bowl mix flour and salt.
In large bowl, beat eggs, add sugar, vanilla and beat well.
Add flour mixture to this and blend well. Heat skillet to medium low, spray with nonstick cooking spray or use oil, drop batter by tablespoons onto skillet and cook like pancakes, about 1 minute per side. Serve with frosting for spreading.
For a double chocolate treat I sprinkle chocolate morsels on each disk - white chocolate morsels add a nice contrast.
The recipe calls for Buttercream Frosting. Not in my house - at least not on pancakes. It's whipped cream instead! And for a triple chocolate treat - you can drizzle a bit of chocolate syrup over the whipped cream (or chocolate sprinkles). Top with a cherry if desired. Try chocolate whipped cream.
I have also made these with chopped nuts and/or chocolate morsels. Also with raisins and chopped maraschino cherries. You can use any combination you want.
Fresh strawberries and strawberry cool whip is another topping.
These satisfy the sweet tooth and the chocolate craving!

KW,
You are posting recipes that are going to blow my diet right out the window if I try them. Believe me I am trying hard to resist and not regain what I have lost so far.
I remember having biscuits with chocolate gravy for breakfast but leave it to you to come up with chocolate pancakes. If you use the triple chocolate recipe you described, you're gonna have to change the title to Chocolate Lover's Breakfast/Brunch (Death By Chocolate By Dinnertime/Suppertime?) Oh well, a day without chocolate just ain't a real good day, is it?

Pat -
First of all - I would like to congratulate you on your weight loss - regardless of how much it is - it is better than still having the pounds or gaining additional ones!
But I must tell you - chocolate is very good for you and very medicinal! (Now how is that for an excuse to enjoy it!!)
It is a woman's God-given right to enjoy chocolate.
Chocolate will never argue with us, throw dirty laundry around, complain about spending money while we are saving so much at sales, or hide the remote from us - as well as other things.
Since we only live once - we may as well live as CHOCOHOLICS!
If chocolate was bad for us - God would not have created it. And there is so much we can do with chocolate.
So enjoy!

A day without chocolate (in moderation, of course!) is like a day without sunshine.
