today's lunch
Not sure of dinner yet - but for lunch (since I went to the farms yesterday)-
Clean, boil whole zucchini till tender, meanwhile I skinned fresh tomatoes in hot water, smashed, added salt, pepper, garlic, parsley, basil, marjarom and heated through.
Chopped onion, celery, green bell pepper, red bell pepper and sauteed in butter until tender. Added diced cooked ham. Added diced Italian bread chunks, salt, pepper, parsley, garlic and a bit more butter; cooked down.
Cut the zucchini in half lengthwise, scooped out flesh, cut and added to bread mixture. Filled zucchini halves with mixture; poured tomato mixture over top and sprinkle with grated Pecorino Romano.
Oven 350* F. for 15 minutes.
