zucchini and eggplant

Can you tell I like eggplant???

Eggplant, peeled, sliced in 1/4-inch sliced lengthwise; dip in seasoned flour (flour, salt, pepper, parsley, basil, garlic), dip in egg whites, dipped in flour again; fried in olive oil.

Zucchini, green and red bell peppers, and onions - peeled zucchini, seeded, cut into 1/4-inch slices, fried with sliced onions and sliced bell peppers in olive oil, salt, pepper, parsley, garlic.

Sliced tomatoes and onions; salt, pepper, minced garlic, olive oil.

Served with crusty Italian bread!

One of my favorite lunches!
