easy dinner
Leftover beef stew for lunch and dinner is done in no time - takes longer to boil the pasta water!
Buccatini (al dente), drained; returned to pot with olive oil, minced fresh garlic, minced fresh parsley, salt (not much), cracked black pepper and drained anchovies (to heat through and meld flavors). Transfer to serving platter - add fresh tomato chunks; toss. Enjoy with crusty Italian bread and cheese salad.
Cheese salad:
Diced provolone, diced mozzarella, julienned fontina, sliced pepperoni, sliced celery, diced green and red bell pepper; olive oil/red wine vinegar, pepper, basil, topped with grated Pecorino Romano.

Here's another easy dinner. Most ingenious idea for stuffed manicotti that I've seen. Maybe easy dinner should be a whole thread. I know I'm always looking for such recipes!
Super-Easy Manicotti
16 manicotti tubes
16 sticks part-skim mozzarella string cheese (1 pound)
2 cups of your favorite marinara sauce, homemade or canned
1/4 cup freshly grated Parmesan cheese
Grease an 11 x 7-inch baking dish. In a large pot of boiling salted water, cook the manicotti for 6 minutes, stirring once at the start to separate the tubes. Drain well, then rinse under cold water and drain again.
Insert a mozzarella stick into each tube. Arrange the filled pasta in the prepared baking dish. Pour the sauce on top.
Bake at 350F for 30 minutes. Sprinkle the Parmesan cheese over the top of the dish and serve.

Here is an easy recipe that I make when I don't have time or can't come up with something for dinner...
Baked Chicken with New Potatoes
1/2 stick margarine
7 cloves garlic, cut in half
8 baby carrots
boneless chicken breasts or thighs
8 new red potatoes, washed and cut in 1/2
1 1/2 tsp salt
1/8 tsp pepper
1/2 tsp paprika
Preheat oven to 425 degrees. Melt margarine in large roasting pan. Scatter garlic and carrots in melted margarine. Arrange chicken and potatoes (skin side up) in roasting pan. Sprinkle salt, pepper and paprika over chicken and potatoes. Bake 30 min. Turn the chicken and baste before baking 15-20 min more.

Quick and easy Tuna Salad:
1 box of Macaroni noodles
2 cans of tuna
Miracle Whip mayonnaise
3 Celery stalks
1 large Onion
3 boiled eggs
Prepare the eggs and let them cool down. Boil macaroni noodles until tender. While the noodles are boiling, dice three celery stalks. Use half to 3/4 of the onion and dice it up. Cut the eggs into small chunks. Put tuna, onion, celery, eggs and noodles into a large bowl and add 3-4 large spoonfuls of Miracle Whip and mix together. Add more Miracle Whip if the salad looks dry. Salt and pepper to taste. Eat alone, on a sandwhich or my personal favorite with Ruffle's Reduced Fat chips. Enjoy!
