These are very easy make-aheads -

I bought a bag of Pepperidge Farm Soft Baked Chocolate Chunk Dark Chocolate Brownie Cookies - froze to harden a bit - and spread softened chocolate chip ice cream on bottoms of half of cookies and topped (bottom side down) with another cookie making ice cream sandwiches. Rolled ice cream edge in mini chocolate chips and individually wrapped each and froze. Nice when you are having a chocolate attack!
