Curried Egg Salad Sandwiches

Curried Egg Salad Sandwiches

1/2 c. mayonnaise 1/2 t. honey 1/2 t. curry powder 1/8. t. ginger 6 hard boiled eggs, coarsley chopped 3 green onions, sliced 6 slices whole wheat bread sliced tomatoes
In bowl mix mayonnaise, honey, curry and ginger. Stir in eggs and onions and divide among bread slices. Top each with a slice of tomato if desired.

Served with sausage mushroom stew.
