lotsa meals from tomorrow's dinner....
Did some grocery shopping today and bought 2 good-sized chickens. Tomorrow I will roast them and make mashed potatoes, gravy, veggies.
When dinner is done I will strip the remaining chicken from the bones and toss the carcass, skin, wings in a pot with onion, carrot and celery to make chicken soup; strain that and add veggies and pasta and chicken with seasonings for a great homemade chicken soup - making enough for 2 days.
The remaining chicken will be diced and chicken salad will be made from that for sandwiches or to enjoy with crackers.
And - depending on how much chicken is left (these are BIG birds) there is a real good chance that some of the chicken will be used for pulled chicken sandwiches (with BBQ sauce). Add some coleslaw and serve as you would pulled pork sandwiches.
My cooking will be done for the weekend!
