chicken and meatloaf with raisins

Yesterday bought large packs of boneless skinless chicken breasts and fried them all in a bit of olive oil, garlic, salt, pepper and parsley - wanted leftover chicken to dice and freeze for casseroles and cut into strips to put in BBQ sauce at a later date when I'm pressed for time.

Made cornbread and cornbread stuffing, sweet potatoes, steamed carrots and broccoli; sauce made with cream of chicken soup; sliced beets and chick peas in viniagrette.


Today I am making one of my favorite meatloaves - ground chuck, eggs, dry bread crumbs, salt, pepper, parsley, garlic and raisins. Tomato soup in the mix and also poured over the top - crockpot it until done. Will serve with mashed potatoes, butter beans and herbed bread.
