the day after..........

The holiday meal was fantastic - like always. And of course, there are turkey leftovers.

Today the turkey carcass, back, skin and wings are in the stock pot which will give me a great broth - added seasonings, onion, celery, carrot - and the turkey had a wonderful flavor so I know the broth will be good. I'll strain this, freeze some for future use and make a turkey/noodle/veggie soup.

Some of the turkey has been diced for turkey salad sandwiches. And I have a bag of it in the freezer for a future casserole.

Turkey soup and turkey salad sandwiches for lunch.

Leftover veggies, turkey and gravy will make potpies for dinner tonight.

Hope everyone had a wonderful Thanksgiving! I was on kitchen duty for oour clubhouse and served 200 residents. Picked up a sandwich tip of the day. We loved it and hope you do, also. Very simply, serve your favorite turkey sandwich on raisin bread!! Delicious.........Elaine from TampaBay, FL
