easy lunch and dinner....
Today I made a pot of soup for lunch - kielbasa and cabbage. Chunked some kielbasa links, boiled with chopped celery, carrot and onion, salt, pepper and onion. When the kielbasa was more than half cooked - added diced potatoes, chopped cabbage, chicken bouillon. Simmered until the potatoes were tender and the cabbage was done. Served with crusty bread.
Since I made a big pot of spaghetti sauce yesterday, I have enough for tonight's dinner - pizza - made on crusty Italian bread cut lengthwise in half. A very light spreading of butter on the bread will keep the sauce from "sogging" through. Topped with sliced mushrooms, sliced pepperoni and grated Parmigiano Reggiano - baked 350* till done. Served with a large antipasto - romaine, endive, celery, red onion, grape tomatoes, carrot, chickpeas (garbanzos), sliced soppressata, genoa salami, provolone, mozzarella, peperoncini. Hard cooked chopped eggs, sliced beets on the side. Olive oil/red wine vinegar vinaigrette.
Still some chocolate cake donuts leftover from yesterday, so today - place a scoop of ice cream in the "hole" of the donut, drizzle with chocolate sauce, chopped nuts, whipped cream and a cherry on top.
