Default fish and taters

I love haddock and today is Friday so I get to enjoy my fish.

Lay haddock on foil; season with salt, pepper, garlic, parsley and place fresh lemon slices on top. Seal and bake until done.

Dice Yukon Golds; toss with olive oil, fresh lemon juice, salt, pepper, garlic, parsley and paprika; spread on baking sheet. Bake until done, tossing every so often.

Orange jello with fresh nectarine slices (seeded and skinned) and sliced bananas; whipped cream.

Warm dinner rolls with butter:

2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1 1/3 cups whipping cream
2 tablespoons butter melted


Combine the flour, baking powder, sugar and salt. Make a well in the center of the flour mixture. Add the whipping cream all at once.

Using a fork, stir just until moistened. Turn dough out onto a lightly floured surface. Quickly knead by gently folding and pressing dough 10 to 12 strokes. Pat or lightly roll dough into an 8-inch square. Cut into 16 squares. Place biscuits 1 inch apart on a large ungreased cooking sheet. Brush tops with the melted butter.

Bake in a preheated oven at 425 for about 12 minutes or until golden. Remove from cookie sheet. Serve hot. Makes 16 biscuits.

This is another recipe from our sister site - SMR and it was requested today with our fish and taters! Another keeper from Ron!

Spicy O-Nuts

Vegetable oil, for frying
1 extra large sweet onion
2 cups complete pancake mix, any brand
1 cup beer
1 tsp sweet paprika
1 tsp chili powder
1/2 tsp ground cayenne pepper = (or 1 tspn hot sauce)
Salt, to taste



1 Heat 1-inch vegetable oil of moderate to medium-high heat. If you wish to test the oil, add a 1-inch cube of bread to hot oil. If it turns deep golden brown in color in a count of 40, the oil is ready.
2 Trim ends of onion and peel. Cut into 3/4-inch slices and separate rings.
3 Mix together pancake mix and beer, season with paprika, chili powder and cayenne pepper or hot sauce. Batter should be thick. If it gets too thick, add a splash more beer.
4 Working in small batches of 5 to 6 slices, coat rings of onion in batter and fry 4 to 5 minutes, until evenly golden brown. Turn onions over so that both sides get puffed and cooked.
5 Transfer to paper towels to drain. Season o-nuts with salt while hot. Repeat with remaining ingredients. When all the onions are dipped and fried, turn off oil to cool before discarding.
