chicken/taters/mac salad
With the holidays consuming so much time - I need to make somethings that are quick!
Today -
Pounded out skinless boneless chicken breasts; dipped in beaten egg; dredged in dry bread crumbs, salt, pepper, parsley, minced garlic, poultry seasoning, cayenne, grated Pecorino Romano. Skillet fried in olive oil with garlic. Served on crusty Italian rolls with lettuce, tomato, onion, roasted peppers and mayo.
(Red and green bell peppers, charred over an open flame/sweat in bag/peeled).
Macaroni salad: Shells, hard-cooked eggs, chopped onion, chopped carrot, sliced sweet gherkins, mayo. (made enough for tomorrow too)
Herbed potato slices: sliced white potatoes tossed in olive oil with salt, pepper, parsley, minced garlic, rosemary and pan-fried.
Relish tray: Green stuffed olives, black olives, pickled cauliflower, pepperoncini, sweet midgies.
Dessert: Walnut brownies topped with cool whip which is topped with chocolate instant pudding (let the pudding set in the fridge for 5 minutes before spreading over cool whip layer), top that layer with more cool whip and sprinkled with chopped walnuts and chocolate sprinkles.
