Christmas leftovers
We all know what to do with our Thanksgiving leftovers, but what about your Christmas leftovers?
The leftover braciole, homemade Italian sausage and pasta will be enough for today's dinner. Meatballs are all gone. Green salad and crusty Italian bread - easy day. I will just warm it all in the oven with a bit of extra sauce.
Leftover roast beef has been sliced and placed in freezer containers with gravy for future sandwiches or to be used with taters and veggies for a complete meal. Some of the roast beef was used to make homemade TV dinners with the leftover mashed potatoes and veggies. Quick meals (and still homemade!) when there is no time.
Leftover ham gets salty if frozen for too long so I cubed some and I have a pot of soup on the stove: cubed ham, chicken broth, chopped onions, chunked carrots, chopped celery, diced potatoes and chopped cabbage; season to taste.
For breakfast this morning - it was sliced ham skillet fried and eggs with rye toast.
There is a small piece of ham left that I will use for omelets or add to salads and grind the rest for ham salad for sandwiches or as a cracker spread with mayo/salad dressing, chopped sweet pickles (I prefer that over relish), minced onion and celery.
