breakfast/brunch
I wanted to make a nice hot breaskfast today. I had made homemade bread and shaped it into a round loaf so I sliced it horizontally for a big round, thick slice. Toasted in the broiler on both sides, buttered.
Crumbled some homemade breakfast sausage patties and skillet fried with chopped onion, chopped green bell and red bell pepper; because the sausage was homemade I didn't have much fat to drain off; scrambled eggs and poured over cooked mixture and cooked on the stove top till the bottom was set; transferred to hot oven to finish cooking.
The skillet and slice of "toast" were the same size; so I slid the cooked sausage/egg mixture onto the toast and placed sliced cheese on top - bake in the oven for a few seconds to melt the cheese; cut into wedges with my pizza cutter and served. Fresh squeezed orange juice (I love that because I zest the rind and dry for baking, etc.)
A nice tummy filler!
