Cheese gnocchi
I made my ricotta last night; today it's ricotta gnocchi in meat sauce with ground chuck and my mild Italian sausage. A large antipasto and one of my favorite monkey breads for dipping in sauce.
For this monkey bread I am using homemade bread (equivalent to 2 loaves) cut into about 100+ pieces and I will need a small cube of mozzarella and a slice of pepperoni for each piece. Place a slice of pepperoni and a cube of cheese (I am using mozzarella, provolone and fontina cubes) in each piece of bread and pull the dough around the cheese and pepperoni sealing very well; roll into a ball and dip in melted butter; place in bundt pan. Bake 350* until done. Leftover sauce for dipping!
If you don't want to make your own bread you can use store-bought frozen/refrigerated bread - two 1-lb. loaves.
