a fast food dinner
Not much in the mood for a lot of cooking today - I think I did too much for the holidays.
We could always get a fast food dinner - like from McDonald's - NOT!!! (especially with my history with them!) so I'll make my own.
Burgers made with ground chuck, seasoned with kosher salt, cracked black pepper, fresh minced parsley and garlic; skillet fried in a bit of olive oil and more garlic cloves and carmelized onions cut into rings. I'll melt a dollop of salsa con queso (Taco Bell jar in the fridge I want to get rid of) on each burger and served on large bulkie egg rolls.
A side order of baked potato wedges (scrubbed and cut into wedges - Yukon Golds). Drizzle a bit of olive oil in a bowl, sprinkle with kosher salt, cracked black pepper, minced parsley and paprika - add tater wedges and toss, bake at 350* F. until done. I've got sour cream and chopped chives I'll combine and use for dipping.
Easy as pie dessert - LOL!!! One chocolate chip pie crust made from crushed chocolate chip cookies and melted butter pressed into 10-inch pie plate and baked for 5 to 7 minutes; cooled and filled with a layer of vanilla pudding; let set 5 minutes and top with a layer of chocolate pudding. Will serve with whipped cream.
