Coca Cola Chicken & Rice
Tonight I am going to cook Coca-Cola Chicken & Rice.... It is winter here (New Zealand), so I would usually do a salad with it, but it's just not the weather! LOL...
Anyone else have other suggestions for what to have with Coca Cola Chicken?

Re: Coca Cola Chicken & Rice
what about pinto beans?
1 pound dried pinto beans, soaked overnight
8 cups water
12 ounces Coca-Cola
1 (14 1/2 ounce) can whole tomatoes, undrained
1 1/2 medium onions, chopped
1/4 to 1/2 cup tomato-based barbecue sauce
2 to 3 slices slab bacon, chopped
3 tablespoons chili powder
2 tablespoons Worcestershire sauce
4 garlic cloves, minced
3 to 4 fresh serranos or 2 to 3 jalapenos, minced
2 teaspoons cumin seeds, toasted and ground
1 teaspoon salt, or more, to taste
In a Dutch oven or heavy stockpot, combine all ingredients except salt. Bring to a boil over high heat, then reduce to a simmer. Cook slowly, stirring up from the bottom occasionally, for at least 2 hours, adding more water if the beans begin to seem dry.
Stir in the salt the last few minutes of cooking. The beans should hold their shape but be soft and just a little soupy. Serve in bowls with a bit of the cooking liquid.

Re: Coca Cola Chicken & Rice
It can be made a couple different ways:
COCA COLA CHICKEN
1 chicken, cut into serving pieces
1 pkg. dry onion soup mix
1 (12 oz.) can Coca Cola
3 tbsp. flour
Put chicken into baking dish. Mix Coca Cola, soup mix and flour together. A whisk does a good job. Pour over chicken. Cover and bake in 350 degree oven for 1 to 1 1/2 hours or until done. Serve with rice or potatoes. The sauce makes its own gravy.
COCA COLA CHICKEN
1 chicken
1 c. Coca Cola
1 c. tomato ketchup
Salt and pepper to taste
Cut up the chicken as for frying. Place it in a deep pan that is oven safe. Salt and pepper chicken. Mix together the Coca Cola and the ketchup. Pour over chicken. Bake at 350 degrees for 30 minutes.
COCA COLA CHICKEN
Chicken breasts or pieces
1 c. Coca Cola
1 c. barbecue sauce
Salt and pepper to taste
Skin chicken; arrange skillet. Pour coca cola and barbecue sauce over chicken. Let come to a rolling boil; lower heat and simmer for 1 hour.
You can also add Worcestershire sauce, onions, etc. It's one of "those" recipes that you can do a lot with - add whatever you want.
