Thumbs up Crockpot Bbq Meatloaf

Today it's BBQ meatloaf in the crockpot, mashed potatoes and corn on the cob. Crusty bread and salad of greens.

Meatloaf: Fresh ground chuck, eggs, bread crumbs, seasonings, BBQ sauce; form into loaf and place in crockpot - cook 2 - 3 hours, remove any drippings, pour over BBQ sauce, continue cooking 2 to 3 hours.

Mashed potatoes with butter, sourcream, seasonings.

Corn served with butter.

Salad: greens, vidalia onions, cucumbers, tomatoes, vidalia onion dressing (sour cream, vinegar, sugar, grated vidalia onions)

Basic "tray" - sliced beets, chunked cheese, assorted pickles, olives and peperoncini.

Dessert - parfaits - cubed brownies, ice cream, fudge sauce - topped with whipped cream and sprinkles and/or chopped walnuts.

Just a nice Sunday meal for a family to have!

No matter how I fix the meatloaf for the crockpot it always falls apart. So how do you prevent it from doing that I just hate it when one falls apart. But it sounds so good in fact the whole meal does.

My meatloaves always fall apart! The best part about leftovers is the fact that it is refrigerated - makes slicing easier! Especially for making sandwiches.

Try putting a long piece of aluminum foil under it. Leave long enough you can use the sides of foil for handles. Emeril on the food network may have said it best when his meatloaf fell apart on tv( there are pretty dry meatloaves, and moist,delicious scrambled meatloaves).
