"Pirate" food

Tomorrow being Friday - no meat day around here - the request was "Pirate" food!

Bake 6 potatoes until tender; slice off the top of each potato and scoop out the pulp, leaving a shell of about 1/4-inch.

Combine pulp with 1/2 c. shredded Cheddar cheese; add flaked canned salmon (remove skin and bones), 1/2 c. milk, 2 eggs, a handful of minced onion and a few turns from the pepper mill. Drizzle a couple of tablespoons of melted butter and combine. Fill potato shells; and top with additional chredded Cheddar; place back in oven to heat through and melt cheese.

Any leftover salmon mixture can be added to more canned salmon, eggs, bread crumbs, onion, seasonings and formed into salmon patties. Skillet fry in a bit of olive oil.
