Default Two Dinners in One

I am a down home/country cook....nothing fancy
or gourmet, but always going for a great taste!!!

Dinner #1:
Grilled Pork Ribs
Pork Rice
Steamed Carrot Slices
Spiced Up Coleslaw
NOTE: can add corn muffins to this meal, if you want some bread.

Dinner #2:
Pork Fried Rice
Lemon Butter Broccoli
NOTE: can add whole wheat muffins or Chinese buns to this meal.


#1......Pork Ribs

Put one slab of ribs in a large pot with about 3 inches of water.
Curl it to fit, but stand it up if possible. Bring to boiling, turn
heat to medium low, cover, let cook for about 45 minutes. Next,
remove from heat, take ribs out and put on a large baking sheet,
flatten ribs slab. Sprinkle on both sides: McCormick 1 Step garlic
herb chicken seasoning. Grill on medium. Cut into serving pieces,
saving out 1 or 2 ribs for tomorrow's dinner.


Pork Rice

Strain broth from cooking ribs. Measure out 4 and 1/4 c. broth,
let remaining broth cool (then refrigerate for another use). Put
in pot: 2 c. white rice, 1 tsp. salt, measured broth. Bring to a
boil, cover, turn heat to lowest, cook for 14 minutes. Turn off
heat, let sit covered 10 minutes, tilt lid and cool for 5 minutes
more. Serve half of the rice, save other half for tomorrow's
dinner.


Steamed Carrot Slices

Peel as many carrots as you want to use for 4 servings. Cut
slices on the diagonal. Steam to desired tenderness. Drain.


Spiced Up Coleslaw

Cut or finely shred 6 to 8 cups cabbage. Put in bowl, add mayo,
red wine vinegar, some of the same garlic herb seasoning as used
above. Stir to combine and coat, adjust with a bit of milk and some
salt and pepper if needed.



#2....Pork Fried Rice

1 or 2 pork ribs, remove meat and set aside
1 to 2 stalks celery, sliced or diced; saute in a little oil and soy
sauce until desired tenderness, set aside
2 to 3 eggs, scramble, mincing with a fork when mostly cooked,
set aside with the above.
Thinly slice 2 to 4 green onions, set aside in a small bowl.
Put just a little oil and some soy sauce in large skillet or frypan.
Add the saved rice from yesterday, stir and heat. Add green
onions, then the rib meat/cooked celery/scrambled eggs. Stir
and heat all. Remove from heat, ready to serve.


Lemon Butter Broccoli

Cook fresh or frozen broccoli until done to your preference. Drain.
Add butter and squeeze with fresh lemon, stir.
NOTE: if you have leftover carrots from last night, can add them
to the broccoli, or serve separately.

Sounds good cookinmamma!!! I agree with you - home cooking is the best! I do not believe in "art on the plate" - I'm old fashioned Italian - you don't serve meals that way! And there is nothing like home cooking -it's the only way to go! Home cooked meals, served homestyle with the whole family eating together - that's how it is in my house.

Way to cookinmamma, there is nothing like a home cooked meal, I do not like fancy dishes, or prepackaged foods nor microwaved foods either. Myself just good Southern and Italian cooking. With all of the family together what could be nicer.
