Crockpot cooking today
Still drying peppers in the dehydrator and doing more banana slices and apple slices - so the crockpot can do the cooking for me.
I've got about a 3 lb. meatloaf in the 5 1/2 qt. crockpot with red potato halves, carrot chunks and quartered yellow onions on top (yes on top - not under it!) Ground round, eggs, bread crumbs, ketchup, seasonings. Potatoes and carrots were tossed in olive oil and seasonings before placing on top.
Salad is done - just need the dressing - lettuce, romaine, tomatoes, cukes, pepperoni, mozzarella, green bell peppers, pepperoncini, banana peppers.
Baguette.
White cake is in the oven - buttercream frosting - ice cream is in the freezer!

Re: Crockpot cooking today
Witch,
I've never cooked a meatloaf in a crock before and it will be plenty to slice for other uses like meatloaf sandwiches. Now this I have got to try in the next few days as it is suppose to get to 105* Wed. and there wouldn't be almost any heat in the kitchen. And the salad sounds very good to I've got plenty of red, yellow, green bells to put in it. I like the idea of the veggies on top.

Re: Crockpot cooking today
Belle - it seems like these days the veggies have to go on top when making a meatloaf. I swear the butchers are pumping water into their meat for added weight - whether you buy it ground or you grind it yourself. With the veggies on top I can use my turkey baster to extract the water (it's not grease/fat - it's water) so that I am not boiling my meat.
