Labor Day Weekend -
It is here - the unofficial end of summer - Labor Day!
Are you having a picnic or family outing for the weekend? Going to a potluck? What are you bringing? Or what are you serving?

Here's an easy dessert - not only for the holiday - but for anytime!
3-Step Cheesecake
2 packages cream cheese - 8oz. each -- softened
1/2 cup sugar
1/2 teaspoon vanilla extract
2 large eggs
1/2 cup semisweet chocolate chips
1 graham cracker pie crust, 9 inch
Beat cream cheese, sugar and vanilla at medium speed until well-blended. Blend in 2 eggs. Stir in chocolate chips then pour batter into graham cracker pie crust. (You may sprinkle 1/4 cup mini semi-sweet chocolate chips on top if you desire) Bake at 350° F for 40 minutes, or until center is almost set. Cool. For best results refrigerate for 3 hours.

Pork Rub Recipe
This rub is very spicy and I wouldn't recommend using it on ribs or chicken unless you really like the heat. When cooking pork for 8 to 10+ hours, the spicy heat is reduced and just more of the flavors of the pepper remain.
3 cups of turbinado sugar
½ cup + 2 tablespoons of kosher salt
4 tablespoons of paprika
1 tablespoon of black pepper
1 teaspoon of chipotle pepper
1 tablespoon of onion powder
2 tablespoons of garlic powder
1 teaspoon of oregano
Combine all ingredients in a bowl and mix well; use as a dry rub on pork.

Grilled pork roast with Kitchen Witch,s Pork Rub
Mexican Grilled corn on the cob
JanT1053 Dilled potato salad
Pineapple creamy Cole slaw w/chopped toasted walnuts
Belle,s Five Bean Bake
Grilled Texas Garlic-Herb butter toast
Home made yeast rolls
Lemon-Garlic green beans
Hot dogs all trimmings
Hamburgers all trimmings
Salsa with tortilla chips
Potato chips
Cheese platter, veggie platter with assorted dips, all home made
Relish tray home made
Assorted crackers
Cherry-Nut cake, Fuzzy Navel cake, Triple chocolate cake, home made
Strawberry Pretzel salad home made
Assorted cookies and muffins home made
Assorted sodas, regular & flavored iced tea, beer, mixed drinks, coolers
Assorted salads with assorted dressings home made
So this is it folks!!!

It's an absolutly beautiful day today! So we are having an "indoor" picnic!
Homemade baked beans with chunks of ham and salt pork; sirloin patties skillet fried with plenty of garlic, butter, olive oil, salt, pepper, and parsley served on bulkie egg rolls; of course - homemade BBQ chicken wings with bleu cheese for dipping (after all it IS the "superbowl" of the chicken wing world with our National Chicken Wingfest going on this weekend - so I've got to make wings today!) Also breaded chicken tenders, potato casserole, corn on the cob and a loaded antipasto with red wine vinaigrette and homemade garlic croutons. Beans and potato casseroles are in crockpots - wings and tenders done in the oven - really easy today!! Just need to use the stovetop for burgers and corn!
