Today's lunch - sandwiches and salad -
Sliced Italian bread (3/4-inch slices), very lightly butter one side, place one slice of Monterey Jack on one slice, place one slice of Swiss on the other slice.
In skillet, in butter, saute just a bit of finely chopped onion, red and green bell pepper - until soft; scramble eggs in a bowl - season with pepper and a bit of salt - pour over onion/pepper mixture. Fry on one side, toss and fry the other side - transfer to one of the cheese-topped bread halves, top with the other cheese topped half. Lightly butter top of sandwich and place in pan, butter other side. Do not press - just let it get brown and get crispy on the first side, turn and repeat on the other side. Cut on the diagonal to serve with crispy pickles.
Meanwhile - a simple and delicious salad of sliced beets, cut green beans, garbanzos, pepperoncini and chunks of Swiss cheese; drizzle with olive oil, a splash of vinegar, basil, salt and pepper to taste.
