Default it's COLD OUTSIDE!

It's cold out - been trying real hard to snow for the past couple days! The 6 inches we got the other day is gone - thank heaven! It's just too soon!

Today I roasted a couple chickens; with mashed potatoes, gravy, butter beans and peas.

By the time we were done eating I was ripping the remaining chicken apart and saving the meat from the chicken into one bowl, the bones, wings, backs and skin in a pot for soup - added chunked onion, carrot, celery and seasonings; boiled, strained, returned to smaller pot and added sliced carrots, celery, shell macaroni, then added frozen corn and peas and some diced chicken.

The remainig chicken was diced for chicken salad for sandwiches or cracker toppings while watching the boob tube. There's even enough for sandwiches for tomorrow to go with the soup and I don't have to cook - just warm up!

Sounds so good KW and perfect for a cold day. I do two chicken at a time so I can eat them and do exactly what you do so I do not have to cook the next day just warm up and it saves a lot of time to.
