Beat up chicken!

Today it's chicken!

Pound (beat it up! - as my babies would say!) boneless, skinless chicken breasts to an even thickness between plastic wrap; cut into fingers. Season with lemon pepper (press in); set chicken pieces on fresh plastic wrap that has been floured; sprinkle with flour on top; pound again (beat it up again!) LOL.

Heat olive oil and butter in heavy skillet; saute fresh garlic cloves; dip chicken in beaten eggs and dip in grated Romano/Pecorino cheese (lightly dip); fry until golden and done; sprinkle with more grated Romano if desired.

Baked potatoes with butter and sour cream.

Asparagus, sauteed in olive oil and butter; seasoned with lemon pepper.
