too lazy today!
Sundays have always been a day of big meals in our house.
With this storm and all the shoveling I am so sore that I just can't do much in the kitchen - but it is Sunday!
Today I am baking a steak in the oven (talk about being lazy!), drizzled with olive oil, plenty of fresh garlic, fresh minced parsley (that killed to do!), kosher salt and cracked pepper. Topped with onion slices - late I will add slice fresh mushrooms (using a cutter for those!)
Gravy - of course!
Baked potatoes with sour cream and butter (placing those on foil - one less pan to wash).
Corn casserole.
Drop biscuits using my baking mix.
Dessert - chocolate pudding with whipped cream.

Hi KW,
First of all, deep sympathies on your being buried in sn*w (which by now is possibly becoming a nasty 4-letter word).
Have you posted the recipe for your baking mix somewhere on this site? It sounds like a real time saver to have on hand. I tried to do a search with "baking mix" and your name and got over 120 results...I am not really too good with computers... And apparently am not nearly as good at using the search engine as I though I was

cookinmaven - thank you for the sympathy! And it is a VERY dirty 4-letter word. I don't care if this is the snowbelt - sometimes you just can't take anymore.
As far as the baking mix recipes - you are fine with the search engine - it is the amount of recipes that have been posted on the site - so it is not you.
I have many mix recipes I use - I like to know what I am eating - LOL!
Here's a couple of the ones I use:
4 cups flour
1/2 cup nonfat dry milk
1-1/2 teaspoons salt
2 tablespoons baking powder
3/4 cup shortening
Stir dry ingredients together until well mixed. Cut in shortening
until the mixture looks like cornmeal in texture. Store in an air
tight jar or can. Makes 5 cups of mix.
8 cups all purpose flour
1/3 cup baking powder
2 tsp salt
2/3 cups nonfat milk
1 cup shortening (not oil)
Mix all dry ingredients together in a large mixing bowl. Cut in shortening until it resembles coarse meal. Store in an airtight container. Will last three months . If you need to keep longer, freeze. Use like Bisquick or any biscuit mix.

Yummy! Thank you, Kitchen Witch. (And let's hope and pray for SPRING--starting right now.) Do you have a favorite? Does the second recipe make a "lighter" biscuit? I don't mean to be a pest, but I have never made my own pre-made convenience mixes, although I have meant to begin for quite some time. (And now seems as good a time as any. I need to become more efficient). Thank you again, so much.

Those mix recipes are used just like bisquick -
Try this -
10 cups all-purpose flour
1/2 cup baking powder
1/4 cup white sugar
2 teaspoons salt
2 cups shortening
In a large bowl mix together the flour, baking powder, sugar, and salt. Cut in shortening until mixture resembles coarse crumbs.
Store in an airtight container for up to 6 weeks.
2 c. mix and 3/4 c. buttermilk will give you great biscuits
