Default it's that time again -

Oh yeah!

Hams are a-plenty!

Many enjoy having ham for Easter - I know I do - but this year we are having turkey for Easter. And of course, I am not going to miss out on a good ham!

So I bought a good-sized one - and I sliced off some ham steaks - which we had for dinner today with pineapple rings, applesauce, mashed taters and buttered peas.

I've got a couple more ham steaks in the freezer - which I can have next week - I don't like to keep ham in the freezer because it gets salty - and this ham is a very good one! I sliced some for sandwiches and for frying for breakfast with eggs, and I chunked some to add to salads.

The remainder of the ham and the bone will be used for ham soup with cabbage, potatoes, carrots, onion, celery.

And of course - ham salad! Grind up your ham, relish, mayo - great on sandwiches or as a spread with crackers!

Mmmm... I love ham! It's one of the things I miss most living outside the US. Here in Spain, they have wonderful cured jamon, but you can find a big, juicy ham like we eat at Easter in the States. I found something similar once-- it was ham-like, but marbled with lots and lots of fat (making the texture unpleasant) and just... *sigh* wasn't the same.

So eat an extra slice of ham for me on Easter. I'm having cocido soup (and meats) at my mother in law's. At least I don't have to cook!
