Good Chicken on the Grill (or in the oven)!
No one likes dry chicken! Try this one the next time you are grilling chicken breasts:
(This can be done on a grill or you can do it in the oven at 375* F.)
Cut heavy duty foil in 10 - 12 inch squares.
Begin by making your sauce -
Heat a bit of olive oil in a hot skillet and saute one minced shallot and 2 cloves garlic - 2 to 3 minutes. Add 8 oz sliced baby bella or white button mushrooms and saute for about 10 minutes; add rosemary and thyme to taste along with 3 chopped tomatoes; heat through, stirring, about 10 minutes longer; remove from heat.
Add ½ c. chicken broth and lemon zest from one lemon; adjust seasoning.
Brush chicken breasts (boneless, skinless) with olive oil on both sides.
Place one chicken breast in the middle of each. Season to taste with salt, pepper, garlic, parsley (both sides).
Divide sauce among the four breasts; pull up sides of foil to make a packet and seal tightly.
Place on grill or in oven and cook until done - 25 - 30 minutes - depending on the size of the chicken breasts.
The chicken will be moist and have a wonderful flavor! Serve with rice or taters or choice.
Remember - measurements are pretty close as written - I don?t measure when I cook.
