Unhealthy Mascarapone Pasta
Because my wife who is dieting is away tomorrow I'm going to have an old favourite which is also very quick and simple. (probably one of the simplest recipes I know)
Serves 2/3 (will be eaten by one on a blowout)
1 Large courgette (zucchini)
1 tablespoon of olive oil
125g (1/2 a pound?) Mascarapone
150g penne cooked to taste
9/10 chopped basil leaves
In a medium pan heat up the olive oil. Cut the courgette lengthways into strips and add to the pan. Keep stirring the courgette strips so that they cook evenly until they've softened. I like them just at the point where there's a little bite left in them, but you can over/under cook them how you want.
Take off the heat and add the mascarapone which will melt in the warmth of the courgettes. Stir in the pasta and basil leaves and it's ready. It's simple but I really like it.
