Default turkey

I decided to roast a turkey today - I know it's not Thanksgiving but I am longing for turkey. He's in the sink in cold water (cahnging every 15 minutes) for a quick thaw - I want him in the oven as soon as I can.

Gravy, taters, a veggie and stuffing.

I'll pull his carcass apart and make stock for the freezer and also a pot of soup for tomorrow to have with turkey panini!

yep - I'm thankful - for Tom Turkey...........

About two years ago I learned about brining the turkey, I've done it ever since, it cooks faster, stays most and tastes great. Don't wear yourself out, don't forget thanksgiving ang Christmas are around the corner You're making me hungry for the feast all ready
